Chocolate Cake Attack!

Just in case you were ever seized by a desperate lust for chocolate cake, as in right now, here's a nifty trick for making a person-sized cake in a mug. A few ingredients, 5 minutes, and let them eat cake.

Use canola oil, all-purpose gluten-free flour (I use Bob's Red Mill), and a smidgen of xanthan gum, and it does nicely.

You might try just a smidgen more liquid with the gf flour, too, or slightly less time. Mine came up a little dry. Or perhaps, as I suspect, I have an overly ambitious microwave. It's a very tasty cake, and I thank you for the link.

I've seen microwaves for only a few bucks in thrift stores. (I just found an almost-new breadmaker for less than $20.)

How would you do that? Adding lemon juice as part of the liquid and also grated lemon rind? I'll bet desperance would know!

oh i know it's just a matter of getting things together, like time, and money at the same time, then find a way to get it home,*i ride the city bus all over town*
